Have you tried using uncooked beetroot? Wearing rubber gloves, peel a raw beetroot and chop it into pieces the size of rice grains. Add them to the onion. The beetroot cooks as fast as the rice.
On the other hand, if you’d like pink hands, don’t bother with the gloves…

Gosh, I guess I’d be nervous of root veg the night before a race. Don’t ask me why, but somehow I feel like my body’s saying “Give me uncomplicated stodge”. But this does look DELICIOUS, so I’ll give it a try 🙂
