Spicy Flapjacks

  • 250g porridge oats
  • 50g light brown sugar
  • 50g nuts, chopped (whatever you fancy - almonds, pecans or hazelnuts work well)
  • 50g dried apricots, finely diced (though any dried fruit will do)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • Half a teaspoon of chilli flakes
  • 120ml light olive oil
  • 15 dates (pitted) soaked for 15 minutes in one cup of water, then liquidised together
  1. Preheat the oven to 200C/Gas Mark 6.
  2. Place all of the ingredients in a bowl except the light olive oil and the dates.
  3. Stir well and then add the other ingredients.
  4. Mix well, until all of the ingredients are moistened.
  5. Line a 34cm x 20cm baking tin. Press the mixture firmly into the tin and bake for 20-25 minutes (check after 15 minutes to ensure it is not burning).
  6. Allow to cool, then cut into squares.
