Hot Cross Bun Caramel Popcorn
  • For the pop corn:
  • 1 tbsp coconut oil
  • 4 ish tbsp popping corn
  • For the caramel:
  • ¼ cup coconut oil
  • ⅓ cup golden brown sugar
  • ½ cup agave or maple syrup
  • Zest of one orange and one lemon
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp mixed spice
  • ½ cup raisins
  1. First, pop your corn.
  2. Heat a large pan over a medium heat with 1 tbsp coconut oil. Add ⅔ kernels and wait for them to pop.
  3. Once they pop, scoop them out and replace them with a single layer of golden kernels, so the whole of the base of the pan (but absolutely no deeper!)
  4. Put back on the heat and listen to the rat-a-tat popping, shaking the pan occasionally.
  5. Once the popping slows down to once every couple of seconds (or if you start to smell burning!), turn off the heat and put it in a very large bowl to mix in your caramel later.
  6. Preheat your oven to 160 degrees.
  7. Zest your lemon and orange and chop the strips into half-centimetre pieces.
  8. In a small saucepan, melt the coconut oil, then add the brown sugar, syrup, zest, mixed spice and salt. Heat for 2-3 minutes, until it starts to turn darker in colour and smell caramelly. I always thought that you couldn't stir caramel, but you can with this one, and you should, to stop it catching.
  9. Take off the heat and stir in the baking powder. It will puff up to double the size, and go paler, in a very pleasing scientific-experiment kind of way.
  10. Pour your caramel over your popcorn and stir well to coat.
  11. Line two baking trays with parchment pour your popcorn in a single layer over both.
  12. Turn off the heat in the oven, and put both of your trays in for fifteen minutes to crisp up. This will seem like an eternity, but it really is worth it for the difference in texture.
  13. Remove from oven, add raisins and devour.
