It being summertime here in the UK, we’ve been thinking a lot about picnics lately. We’ve noticed that the shops are full of flaccid pies, dreary dips and limp salads, all purporting to be ‘perfect for picnics’. Psht, they’re messing with us! Homemade picnics win by miles.
That said, you don’t have to do it all yourself. Picnics are social events – what’s the point otherwise? – so plan a menu and all make one dish each. Better still, don’t plan a menu at all – we’ve put together the perfect picnic menu for you. Call your friends, pick a location, decide who’s making what and have and amazing picnic courtesy of Veggie Runners!
It goes without saying that all of the dishes on our Perfect Vegetarian Picnic menu are healthy, fresh and runner-friendly (everyone else friendly too, for that matter). We ate this after the 10K trail race at Castle Howard and it went down a treat. The feta, milk and eggs in the quiche have the protein you need for recovery (added bonus: it’s unbelievably yummy). The other dishes – the dips and spreads, the harissa roasted potatoes, the beetroot and super seedy salads – have contrasting but complimentary flavours and an excellent balance of nutrients. For your well-deserved dessert, we recommend our Chewy Fruit and Oat Bars with some berries or cherries and some dark chocolate.
