Apricot, Apple and Hemp Protein Smoothie

We’re really starting to rack up the miles for our Yorkshire Marathon training* now and getting a bit obsessed with keeping our weary muscles in tip top shape. We’ve written before about the importance of getting some protein asap after a run – Post-run Refuelling – 15 Minute Countdown – and we’re always trying to add new things to our snack repertoire to keep things interesting.

This vegan Apricot, Apple and Hemp Protein Smoothie is quick to make and will help to set you swiftly on the path to recovery. Get everything ready before you go out for a run so that you can just buzz it in a food processor or with a stick blender when you get back. The hemp powder – we got ours from the lovely people at Naturya – is naturally high in protein, fibre and Omega 3 and 6 so it can help keep your body and brain healthy! You can expect to be super-fit and a genius after drinking this.

This makes a great breakfast smoothie whether you run or not. It’s filling and staves off hunger well, making it perfect for those days when you have have to get out of the door quick-sharp-pronto.

The dried apricots need to be soaked in water for at least 20 minutes. We set them to soak before we go out running but you can leave them longer, including overnight, if you want to.

Apricot, Apple and Hemp Protein Smoothie
Makes 2 servings

Ingredients
1 banana
1 tablespoon hemp powder
600ml apple juice
6 unsulphured apricots – soaked in 3 tablespoons water for at least 20 minutes
3 drops natural vanilla essence

Method
1 Place all of the ingredients, including the water used to soak the apricots, in a blender (I used my lovely Froothie). You can use a stick blender but it will take a bit longer to blitz the apricots.
2 Buzz until smooth.
